The grapes are harvested manually at optimal maturity. After gentle pressing, the must is fermented in stainless steel tanks at a controlled temperature. Alcoholic fermentation is followed by malolactic fermentation which softens the acidity of the wine. The wine is then aged on fine lees for several months to gain complexity and texture. Chablis Joseph Drouhin is a dry white wine with a bright straw yellow color. The nose is intense and aromatic, with notes of citrus (lime, lemon), white fruits (white peach, pear), white flowers (hawthorn) and mineral notes (flint). The palate is lively and fresh, with nice acidity and a mineral texture. The aromas of white fruits and citrus are complemented by notes of wet stone and white flowers. The finish is persistent and salivating.
