We harvest the ripe olive to make a structured green oil with 77% Oleic acid. High aromatic complexity with attributes of tomato, artichoke, walnuts, almonds and mint. The intense olive fruitiness makes it a delicious oil. The high bitterness in balance with the spiciness and astringency gives a feeling of freshness. The intense spiciness provided by the oleocanthal turns it into a crunchy oil.
