The cultivated varieties are the typical Tuscan ones such as Frantoio, Moraiolo and Leccino but also more local varieties such as Gremignolo di Bolgheri, Olivastro di Suvereto and the Ornellaia variety which took its name from the farm around which the Estate. The olive trees grow on the edge of the Mediterranean scrub, between the brooms and the cork oaks. The poor soil and the more severe climate of the hills give a smaller olive with very intense flavors. This Extra Virgin Olive Oil is obtained from the first pressing of the olives, respecting tradition.
