Colle Formica is an estate that tends to be biodynamically managed in the vineyard, in the cellar indigenous yeasts and homeopathic doses of sulphur dioxide are used, fermentation is spontaneous and ageing takes place between steel and fibreglass for about 6 months. Finally, another 3 months in the bottle before release.
These are classic vin de soif with a slender and exuberant body, ineabriant and with a super drinkability.
Colle Formica has been producing wine since the early 1900s, but only since 2018 have the Bombetti family started bottling this wine that respects the family's centuries-old tradition.
The winery is modern but the production is super artisanal, for example the wine pressing is no joke, historical presses from the 1950s are still used, pure poetry.
In this case we have added instead of the classic Formica Gialla, the Primativo label, which is one of the 2 premium label of Colleformica. Made with Primitivo grapes, which has been discovered is native of Roman Castles as well, that mature 6 months in old casks of oak. Very limited production, 1500 in 2022
Pazza Rosè in an acestral method, when fermentation is about to be over the must is frozen, to then be reused with the base wine in spring, when thanks to temperatures above 20 degrees the alcoholic fermentation resumes creating alcohol and carbon dioxide
