Location
This Pinot Noir red wine grows in our best red wine vineyard, a lower slope with pure southern exposure, the Oberrotweiler Eichberg. It is the Grand Cru site of the winery. The vines are over 40 years old. The soil consists of deep volcanic weathered rock. The grape yield is 3000 kg/ha.

Grape Variety
The Blue Pinot Noir (Spätburgunder) has very high demands on climate and soil and requires the utmost attention and care during processing. The Pinot Noir is fermented on the skins for up to 6 weeks and matures with us for up to 24 months in large wooden barrels or barrique barrels. There it develops its characteristic aroma, as well as a soft taste with rounded tannins.

Vinification
After selective hand-picking, the grapes are partially destemmed in the press hall. Following a cold maceration of about one week, spontaneous fermentation with wild yeasts takes place at 28-30 °C. After several weeks of further post-fermentation maceration, the mash is gently pressed. This Pinot Noir matures for at least 24 months in new barrique barrels. The biological acid degradation begins in the spring of the following year. The wine is bottled without fining and filtration and released for sale after one year of bottle aging.

Characteristics
This excellently matured Pinot Noir displays a ruby-red color with a light, slightly orange-hued rim. On the nose, one perceives ethereal and balsamic notes. In the top note, it recalls sandalwood, incense, rosemary, and nutmeg blossoms, before aromas of black pepper, preserved cherries, and spiced plums emerge, all outlined by subtle aging notes. On the palate, the BARON PHILIPP is carried by the dense and silky tannins, interwoven with a delicate acid structure that creates immense tension on the palate. The fine fruit is complemented by mild spice notes, giving it additional complexity and enormous finesse.

Serving Recommendation
15-18 °C
A wine that calls for grand, festive cuisine! An excellent companion to game, braised dishes, and poultry with dark sauces, also great with fruity components.
