Bottle no. 1642 of 3000 total for 2017 Production Distillate of the wines of our House, which is part of the second phase of the aging process of the brandies we make. The first phase is the same for our Brandy DIEZ MIL BOTELLAS, from whose annual saca 2100 liters are separated to continue aging 13 more years in American oak barrels of 225 liters. Originally, once distilled from Pedro Ximénez, the extracted spirits are aged in 750 liter Chestnut wood casks, which have been previously bottled with our Pedro Ximénez raisin wine; the sum of Chestnut and Oak makes it very balanced. There is a perfect harmony between the sweet flavors and aromas, which the Chestnut respects, and the strong astringency that the oak inevitably contributes. The final blend is achieved thanks to the contribution of the Pedro Ximénez grape as a raw material and the quality of the barrels selected for its production. Each barrel is drawn off according to sensory and organoleptic tasting criteria, but even so the regularity year after year is so strict that it is practically impossible to distinguish one drawing off from the previous one. Finally, the yield is less than 100 bottles of distillate per ton of fresh grapes. Tasting Notes VISUAL: To the eye it sails between dark amber and not very intense mahogany, with greenish trim very typical of its prolonged aging. It does not have an aspect of density or color that makes it appear heavy to the eye. Clean and bright
