Burgundy is recognized worldwide for its red wines. However, this province in northeastern France is also the land of great white wines, such as Nicolas Potel Burgundy Chardonnay Vieilles Vignes.
Nicolas Potel Burgundy Chardonnay Vieilles Vignes is a single-varietal Chardonnay, made by Maison Nicolas Potel. This company, created in 1997 by Nicolás Potel, is dedicated solely to the production of great wines from grapes purchased from vignerons in the area. This, which has been carried out in France for years, is what is known as négociant, a fundamental figure in the wine culture of this country. In the case of Nicolás Potel he knew very well what he was doing. At home his father, the winemaker Gérard Potel, had already taught him well. Yes indeed. There was a golden rule that could never fail in any of his wines: reflect the essence and soul of the Burgundian terroirs.
This task, which may be simple, becomes complicated in Burgundy, where there is a great variety of areas and soils. In the case of Chardonnay, we must focus on no more and no less than four areas: Chablis, the Côte de Beaune, the Côte Chalonanaise and Mâconnais. The limestone soils of all these areas are ideal for this variety, which is widespread throughout the world, but which in these places shows its aromatic complexity.
The production of Nicolas Potel Burgundy Chardonnay Vieilles Vignes begins in the vineyard itself, when the best clusters are selected. From here, the grapes go directly to the press to obtain the must (which will be left to rest, at low temperatures, for 24 hours). Once cleaned, Nicolas Potel Burgundy Chardonnay Vieilles Vignes will pass into stainless steel tanks for alcoholic fermentation (from selected yeasts). After this process, where the temperature will be controlled, a part of Nicolas Potel Burgundy Chardonnay Vieilles Vignes will remain in the tanks, while another (approximately 20%) will go to barrels for aging.
