"Based on the 2016 vintage, complemented by 10% reserve wines and disgorged this year after 60 months on the lees, Collin's NV Extra-Brut Les Jardin d'Ulysse (2016) represents the second iteration of this new cuvée. Unwinding in the glass with notions of citrus oil, crisp green apple, mirabelle plum, pastry cream and nutmeg, it's medium to full-bodied, racy and tightly wound, with terrific concentration and chalky structure, girdled by incisive acids, concluding with a long, penetrating finish. After having produced mono-cépage bottlings from terroir with more or less uniform expositions, the Jardin d'Ulysse is a complete departure from that formula, blending Pinot Noir, Pinot Meunier and Chardonnay, and deriving from a site some 70% of which is oriented north, the rest south. This cuvée really needs a year on cork to start to show all its cards, and Collin is considering extending its time en tirage to 72 months to see what additional potential can be unleashed".
If you are lucky enough to get your hands on Le Jardin d'Ulysse, save it for another year, you will be pleasantly surprised. It is worth keeping in mind the small production of Ulysse Collin.
The vintage of this wine comes from a 1.55-hectare plot of old vines. The exposure is a mix of northern and southern and the soils are soft clay and silex topsoils over limestone. As for all Collin Champagnes, the fruit was hand-harvested, the clusters destemmed and the grapes gently pressed; the juice was fermented spontaneously and slowly (up to six months) with natural yeasts in mainly-used Burgundy barrels; the wine was aged in foudres and tonneaux. The wine was bottled without fining or filtering and aged sur lattes for 5 years. The wine was disgorged and finished with a dosage of 1-2 grams/liter.

The bottles have always been, and still are, stored in a wine cellar with optimal controlled, constant temperature, humidity and protected from UV light.

Dal 2003 Olivier Collin ha rilevato l'azienda agricola di famiglia a Congy, a sud-est della Côte des Blancs. Proveniente da un'antica famiglia di viticoltori della regione, si è formato ad Avize presso Anselme Selosse. Il suo talento è oggi riconosciuto dagli intenditori. Utilizzando solo le proprie uve, ha avviato un processo di conversione alla biodinamica. Ha gradualmente isolato i suoi terroir per creare diverse cuvée. I suoi champagne, che presentano già un'ottima qualità e molta precisione, continuano a migliorare. Sono già tra le etichette più apprezzate dagli appassionati, anche se sono ancora relativamente poco conosciuti presso il grande pubblico.
