Terry Centenario follows a traditional and careful process. Made with "airén" grapes, the result of the distillation is called Holland, an alcohol of 70º. To produce brandy, only the central part of the distillate, the “heart”, is used. Aging is carried out using the criaderas and soleras system, stored in American oak casks previously filled with fine wines from Jerez. The ready-to-bottle brandy is obtained from the solera, which is the fine one closest to the ground and the one that has and monopolizes the oldest holandas. This process gives rise to an exceptional and uniform product in colour, flavor and aroma. History Guillermo Terry, the founder of the famous winery, arrived in Cádiz in 1574 and soon became a successful merchant. However, it was his precursor, Santiago José de Terry y Buset, who followed him and started the winery business in 1783. In the mid-19th century, he was succeeded by his son Fernando A. de Terry, who began to produce his own wines in Puerto de Santa María. It will not be until the third generation, with Fernando Matías de Terry, when the winery is officially founded. In 1905 Terry covered the bottle with a handmade net made in the same city, innovating and at the same time improving the economic situation of many artisans in the city. If you know how the Solera of a Brandy works the first lot of this particular brandy was made in 1870 then part of the brandy is removed from the botas or barrels and is refilled with new vintage brandy, this happens every year from the first vintage the brandy was made. So part of the brandy will still be from 1870 and every year new brandy will be added to the barrels, this is what solera is all about. mixing new brandy with the first brandy ever made and all the vintages ever since. The possition of the barrels all pilled up refers to which brandys are from newer or older vintages always moving the brandy from top to botom being the bottom barrels the ones containing older brandy. This was a new title, and it was bestowed on him because he had defeated a group of pirate ships attacking his fleet, which was carrying royal treasure from South America. As the fleet ran short of munitions, he ordered that his own silver be melted down and used to make more. The resultant glorious victory was rewarded by a grateful king with the honour. After his death the title languished, and it was in 1897 when King Alfonso XIII bestowed it on the original Marques’ grandson, Juan Jacome y Pareja, Vice Admiral and Minister for the Navy, who went on to use the title as a brand name for his Sherries, establishing a bodega in 1904. The first soleras were acquired from the Marques de Villacreces, wines nearly two centuries old which were rightly famous. Soon the firm was supplying wines to the Royal Household. The bodegas, in the calle Pajarete in Jerez contained 5,000 butts, and another in Sanlucar 2,000."
