Si tratta di spumanti con oltre 40 anni di età ed è assolutamente normale che abbiano perso quasi completamente il perlage e si esprimano su note candite e mature. Sono proprio ricercati per queste caratteristiche e per la spiccata acidità figlia del clima di quegli anni
