Domaine Roulot, established in Meursault in the late 18th century, encompasses 11 hectares primarily dedicated to white grapes. Under the guidance of Guy Roulot, the estate transitioned to organic and then biodynamic farming. Jean-Marc Roulot, also an actor, oversees the winemaking. The Meursault 1er cru Perrières stands out, sourced from parcels like Luchets and Bouchères, achieving considerable success in auctions. Jean-Marc Roulot has risen as one of the most skilled winemakers in the Meursault appellation. His unique style involves transitioning to biodynamic farming in the early 2000s after adopting organic farming in 1998.
The aging on lees in barrels for a year, followed by six months in tanks exclusively with natural yeasts, is a testament to his continuous pursuit of excellence in the winemaking process.
