The bunches are treated with care to avoid any damage during transport and arrival at the cellar. Only the free-run must, with a higher acidity and mineral content, is fermented in steel vats at a controlled temperature. In the spring following the harvest, sparkling wine is made according to the traditional classic method of fermentation on the yeasts, in the bottle, at a constant temperature. The bottles remain in refinement for 48 months so that the wine can express all its evolutionary capacity. Then follows the dégorgement and the addition of the liqueur d'expédition. Organoleptic characteristics Color: bright straw yellow with greenish reflections. Bouquet: intense, complex with mature aromatic notes. Spring floral scents can be recognized in their maximum expression. Evident notes of white flowers, supported by fresh green apple fragrances. Taste: the attack is frank, elegant and complex. Pleasant hints of lime gently stimulate the taste buds. The pleasant and persistent finish stands out with constantly evolving citrine and mineral expressions. Alcohol content: 12.5% ​​vol.
