Château Haut-Bailly Cru Classé de Graves 1999
The vintage

Located in the heart of the Graves, in Pessac-Léognan, Château Haut-Bailly has produced a vintage made from a blend of Cabernet Sauvignon, Merlot and Petit Verdot grapes. The vines from which this wine is produced are worked with the greatest respect, manually.
The wines are aged for 18 months in oak barrels, 50% to 65% of which are renewed each year. The hand of Man intervenes very little, in order to let the juice reflect its terroir.
The predominance of Cabernet Sauvignon gives racy wines that are suitable for very long aging, but also sought after for their suppleness and balance. The color of this vintage is deep, with purple highlights. The nose offers a complex palette of ripe black fruits but also sweet spices. The woody notes are present and support everything. The palate is endowed with an impressive roundness, and ends on a suave finish.
The Château Haut-Bailly estate

In the 17th century, the estate became the property of two Parisian bankers, Firmin Le Bailly and Nicolas de Leuvarde, both creditors of the previous owners. The first will give his name to the Château Haut-Bailly. In 1872, Alcide Bellot des Minières bought the land, on the advice of Monseigneur Bonnet, Archbishop of Bordeaux, and had the current château built. In a few years, this savvy entrepreneur and winemaker raised the Haut-Bailly wines to the highest level. In 1955, the estate was bought by the wine merchant Daniel Sanders. This family, now represented by Véronique Sanders, has remained in charge of the estate since then, although it was bought by the American Robert Wilmers in 1998.
Significant investments have been made in the vineyard, the vat room and the cellars (for the 2021 vintage). The Haut-Bailly vineyard lies on a magnificent terroir: a soil of sand mixed with gravel, on a subsoil composed of fossil stones. Perfectly drained due to the slopes, the vineyard is managed in a traditional manner, plowed in the old way, without the use of weedkillers. The vineyard still has very old century-old vines, with varied grape varieties, dating from the post-phylloxera period: Cabernet Franc, Carmenère, Merlot, Malbec, Petit Verdot (good proportion), Cabernet Sauvignon. Yields are deliberately limited: after manual harvests, several sorting operations take place in the vineyard, in the cellar, then on a vibrating table, after the grape clusters have been destemmed.
