THE MARCATO:
The history of the company begins more than a century ago, at the end of the 19th century, when the progenitor Francesco Marcato bought the first 5 Veronese fields in Roncà, moving from nearby Montecchia di Corsara, where he was born. The son Giuseppe collected from his father the passion for the vine and in the forties of the new century he began to produce and make wine by selling to the taverns of the provinces of Verona and Vicenza and, subsequently, marketing on his own. The next generation gave new impetus to the company with the purchase at the turn of the fifties and sixties of additional Garganega, Trebbiana and Durella vineyards for a total area of over ten hectares. At the end of the sixties the company began to bottle. In 1991 Giovanni, Lino and Francesco increased the land by choosing other plots of the Berici Municipalities of Grancona, Sarego and Brendola. The following year began the grubbing up and replanting of part of the forty hectares purchased, thirty of which were planted with vineyards. Between 1993 and 1995, the Marcato company entered the Classic area of Soave, acquiring land on the ridge that separates the municipalities of Monteforte d’Alpone and Soave.

Lessini Durello Brut 60 Months is left to age in the cellar's underground quarries for five years. Produced with the Classic Method, it learns perseverance, the ability to be stable, continuous, persistence. How persistent is this sparkling wine which in the mouth is appreciated for a certain creaminess of the bubble, at the same time it has a minerality that evokes the rock dust which, of medium length and thrust, leaves on the finish aromas reminiscent of citrus and pineapple pulp. The color is bright yellow, the fine perlage is dense and continuous. The complex aroma of white wildflowers and white pulp fruit with a sweet trace of almond and notes of toasted bread. The 60-month Classic Method is produced with 100% Durella grapes from the Lessini Mountains, Val d’Alpone and Verona, with guyot training systems of 7,000 vines per hectare with yields of 80 hl. The harvest is manual in small boxes, the vinification takes place with a soft pressing of the whole grapes, the first fermentation in steel is at a controlled temperature of 14-16 °, the second fermentation, typical of a classic method, takes place in the bottle and is followed by an aging on the lees for five years in the cellar's underground quarries. Medium-bodied on the palate, well balanced between acidity and minerality with a persistent finish. Pairing: it is recommended as an aperitif and goes well with all fish and shellfish dishes, especially oysters.
