Our aim is to produce high-quality wines in a natural way using cultivation methods that do not require unnecessary chemical products. The quality of a wine is already decided in the vineyard (through planting, pruning, maintenance, harvest time) and the wine is then perfected in the wine cellar.
Son Mayol is located in a valley and benefits from the fact that the 25 hectares of vineyards are spread over thirty-five different locations. There are north, south, east and west-facing sites, each with a very different microclimate (sunlight, wind, humidity, soil conditions). This produces very different results, even with the same grape varieties.

In our modern wine cellar (bodega), we vinify the different sites individually and according to the principle of gravity. Only at the final assemblage at the end of the two-year barrel maturation in one to two-year barrique barrels is it decided which vineyards are to be used for which wines.
This makes it possible to produce elegant wines that can be stored for many years and continue to improve.
Really good wine needs a lot of love, patience and experience. Son Mayol wines are made naturally and with pride and are best enjoyed by ourselves.
