Underwaterwine
Cancellariidae is the maximum exaltation of Tintilia. Selected grapes, low yields and
only free-run must envelop this full-bodied wine with character in fragrant mysteries.

Training system Espalier, spurred cordon.

Limited production of n. 450 bottles of 750 ml.
Harvest Between mid and end of October
Winemaking Crushing-destemming of the grapes and traditional fermentation with
maceration of the skins for 12 - 15 days at temperature
checked and daily pumping over. Only the free-run must is extracted,
Spontaneous malolactic fermentation follows.
Maturation of the wine In steel tanks for 18 - 24 months, followed by refinement in the bottle for a minimum of 3 months.
Refinement in the sea The bottles, carefully encapsulated, are placed on the seabed in steel cages, where they remain cradled by the harmonic currents of the sea at a pressure of approximately
4.8 atmospheres, with a constant temperature between 10/13°C.
The resurfacing takes place, with every delicacy and with controlled decompression, after a period varying between 6 and 12 months in relation to weather and sea conditions seasonal.

Organoleptic notes
The wine appears ruby red in color with garnet hues,
compact and consistent. Fruity aromas of blackberry fruit jam, balsamic and ethereal notes. Followed by spicy notes recall pepper, cinnamon and cloves. Nods minerals. Juicy, warm, enveloping mouthfeel, with velvety tannins perfectly integrated. Long tasting persistence.
