Bodegas Alvear is located in Montilla, Andalusia, and was founded in 1729 by Don Diego de Alvear y Escalera, and is still managed by his descendants, who number more than fifty. Bodegas Alvear currently has several cellars where it refines its products, including: La Sacristía and El Liceo, reserved for the older wines; Las Higueras and Buganvillas, where the Pedro Ximénez wines are aged, while in de la Casa, the first property of the Alvear family, located in the historic center of the city and dating back to the 18th century, the soleras of amontillados are kept, which contain wines of more than 200 years of crianza (aging). Bodegas Alvear wines are made with grapes grown in the company’s vineyards located in the Sierra de Montilla y Moriles (Córdoba), planted mostly with the Pedro Ximénez variety, used by Alvear to produce their Jerez Fino, Amontillado and Olorosos. The most famous product made by Bodegas Alvear is undoubtedly the Pedro Ximénez made with grapes dried in the sun followed by aging in barrels according to the solera y criaderas method to obtain dense, syrupy and sweet wines, with aromas of dried fruit, perfect paired with desserts or as a meditation wine.
