This special gueuze is mixed with lambic matured in 7 different barrels, derived from wort from 5 different brews. 3 Fonteinen Oude Geuze is a blend of one-, two- and three-year-old lambic. Spontaneous fermentation, patient maturation in oak barrels and continuous evolution of the ecosystem in the bottle result in a remarkably complex and elegant natural beer. No two bottlings are the same, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in the proportions of aged lambic in the blend, etc. When properly stored, 3 Fonteinen Oude Geuze can age for decades. The aromas and flavors will evolve from notes of vibrant fresh citrus, spicy and grassy notes to a soft, oaky stone fruit bouquet as the lambic continues to develop over time.
