Audrey Brocard is a young winemaker from Chassins, a small village in the Valle de la Marne. Pinot Meunier remains the leading grape variety, elaborated and valued through futs and barriques but also thanks to a consistent use of vin de reserve (Solera) almost always present in the elaborate cuvées. In the cellar, in any case, space and time is left for the natural course of biochemical processes, starting from spontaneous fermentations to long aging.


COUER DE VILLAGE EXTRA BRUT
Audrey Brocard's Cœur de Village Champagne is the result of the assembly of 55% Meunier, 25% Chardonnay, 20% Pinot Noir from grape varieties grown in the Clos de Chassins, in the village of Trélou-sur-Marne, in the Vallée de la Marne.

This Champagne is made from the "Coeur de Cuvée" with a 2019 harvest base with the addition of about 30% of vin de réserve from previous harvests (solera method). The wines do not play the malolattica and a part remains in wood (en foudre) for the elevage. Dosage 2.5 g/l (Extra-Brut).


LE MEUNIER DES TROIS COTEAUX EXTRA BRUT
Champagne Le Meunier des Trois Côteaux is the result of 100% Meunier from grapes grown in Clos de Chassins, in the village of Trélou-sur-Marne, in the Vallée de la Marne.

This Champagne is made with a 2018 harvest base with the addition of about 30% of vin de réserve from previous harvests (solera method). The wines do not perform the malolactic and a part remains in wood (fût de chêne) for the elevage. Dosage 0.8 g/l (Extra-Brut).
