The Durdon Bouval sparkling wine house bases its production on two key principles: quality and sustainability, values ​​at the service of excellent Champagne. Located in the municipality of Vincelles, in the Vallée de la Marne, in 2020 the winery reached its fifth generation of winemakers with the entry of the young Antoine, son of the owners Ludovic and Sandie. Adopting a precise and refined style, the family is the protagonist of a limited production that reflects the character of the Champagnes of the Vallée de la Marne. The Dourdon Bouval estate has just over 7 hectares of vineyards, reserved for the three most classic champenoise varieties: Pinot Noir, Chardonnay and Pinot Meunier, grown with a south and south-east exposure between the villages of Vincelles, Verneuil and Barzy-sur-Marne, characterized by soils rich in marl, clay and limestone. The vines are old and are managed according to the principles of organic farming, certified since 2013, with low grape yields per hectare and gentle soil processing. Furthermore, since 2017 the winery has begun the conversion to biodynamic agriculture, demonstrating the deep respect that the family has for the environment. When the grapes have reached the ideal stage of ripeness, they are harvested by hand, followed by spontaneous vinification that is mainly carried out in temperature-controlled stainless steel tanks, although small French oak barrels are also used for some labels, always with complete malolactic fermentation. The second fermentation takes place in the bottle according to the Champenoise Method, with refinements sur lie for at least 36 months. The final dosages are kept very low or avoided altogether, so as not to interfere with the most authentic expression of the terroir. All wines come from a temperature-controlled cellar.
