The characteristics of Japanese knives include their sharpness and durability, as they utilize sword-making techniques. Their quality is recognized worldwide. The oldest surviving Japanese knife dates back to the Nara period and is preserved in the Shosoin in Nara. Knives were considered consumables that needed to be sharpened, so very few have survived, but it's believed that they existed even before the Nara period. The shape of these ancient knives resembles that of Japanese swords, with exceptionally long handles.

Knives of this shape were used until the mid-Edo period. It's said that knives with similar shapes to today's deba, yanagiba, and nakiri knives were perfected from the mid to late Edo period. The Edo period was a time of stability and cultural development in Japan, leading to the flourishing of various culinary cultures and the evolution of tools to match.
