Silvaner Steillage Silex
The grapes come from Stephan Krämer's steep plots in the Röttinger Feuerstein vineyard. As his wines deviate too far from conventional standards with their natural character, natural turbidity and pronounced phenolics, they may only be marketed as Landwein without a vineyard designation. The term “Silex” - a synonym for the flint that characterizes the soils of the site and gave it its name - refers to this terroir. The majority of the grapes for Krämer's Silvaner Steillage Silex were pressed directly and fermented spontaneously in large wooden barrels. A small batch was fermented intracellularly as whole bunches, a so-called macération carbonique, and later blended with the main batch. Filled without fining or filtration and with only a little sulphur.
Milky-cloudy, pale straw yellow in the glass. Some yellow stone fruit on the nose, slightly yeasty and herbal-ethereal notes, but also hints of fruity curry. On the palate, the wine is very taut, straight and wiry. The tannins still appear somewhat youthful and rugged, but with their slightly salty minerality, typical phenolic spiciness and zesty acidity, they are already a real pleasure to drink.
With good aeration, the Silvaner Steillage Silex is already quite accessible, even if it is still a little edgy. It depends on personal taste whether you like it at this, by Stephan's standards, still very young stage. Otherwise, it is a good idea to simply let it mature over the next few years. Experience has shown that the whole thing then becomes increasingly harmonious, but also aromatically more complex.

Without exception, the wines are dry Franconian through fermented and, since 2015, are only lightly sulphurized once for bottling and unfiltered. Wines that are produced in the best sense of “natural wines” and are timeless and long-lasting thanks to their natural reduction.
Supple, tightly woven and densely woven in the horizontal texture, super pure, melting paired with fine salt and a mineral-saturated finish.
