It remains for 24 months in the winery's large century-old oak vats, made of gray wood, where it completes malolactic fermentation and stabilizes. Aged in used American oak barrels of 225 liters, aged between 18 and 20 years, for a period of 10 years, 120 months. Subjected to a total of 20 manual rackings, at a rate of 2 per year, to remove the lees and oxygenate slightly. Bottled in mid-1986. Aged for a minimum of 42 months in the bottle cellar in the old cellars of Haro before being marketed. This is a special selection made expressly to celebrate the 100 years of life of the winery (Centenary Edition 1890 - 1990). The presentation of this bottle is a tribute to the old wines of La Rioja Alta, emulating the old labels used before the creation of the current brands.
