The grapes come from approximately 19-20 year old vineyards located on the hills of Spello and Assisi at approximately 400 m above sea level. The soils are generally of medium texture tending towards sandy, shallow and with the presence of a highly porous and permeable skeleton due to the alteration of the marine sandstones constituting the parent rock. The harvest began in the first days of September for the Merlot, followed by the Cabernet Sauvignon and the Cabernet Franc. Once harvested, the grapes are immediately transported to the cellar and immediately destemmed, then placed in thermo-conditioned stainless steel fermenters for approximately 15 days of maceration, with regular pumping over and delestage. Subsequently the wine is transferred to 228 liter French oak barriques, where it undergoes malolactic fermentation, and where it will refine for a period of approximately 12 months. Another 24 months of bottle aging will follow.
