Great Wine from Burgundy!
Location and terroir
These overlook the Côte de Beaune to the west, from Les Maranges to Ladoix-Serrigny. Inland, there's a succession of valleys and hills. The vines at the foot of the limestone cliffs cover the sunny slopes.
Vinification / Ageing
The grapes are destemmed and vinified in vats for around 4 weeks, revealing all their rich aromas. After devatting, the wines are racked 50% into oak barrels and 50% into stainless steel tanks, and aged for 12 months.
Tasting
Our Bourgogne Hautes Côtes de Beaune has a purplish-purple color reminiscent of peony blossom or the depth of certain roses. The fruity nose evokes morello cherry and raspberry, evolving to blackcurrant, licorice and undergrowth, often with a spicy touch.
Food & wine
Pairs well with roasted meats, such as veal fillet with mild curry or, more traditionally, a petit salé. It also goes well with simple dishes such as pork filet mignon, veal or leg of lamb. Mild-flavored cheeses: fresh Epoisses, brillat-savarin, Cîteaux, fresh Soumaintrain.
