Bastian Wolbers Negocé riesling with grapes from his pal Régis Bard in Alsace. Pretty much biodynamic but not certified.
Hand harvested. Cooling of the grapes overnight to a temperature of 17 degrees. Slow pressing for about (2-3 hours) in whole clusters clusters, then clarification by sedimentation overnight. Fermentation began with 'pied de cuve' in used barrels of 228 and 600 litres, then the wine rested for about 18 months on the lees before being transferred to tank for two weeks of 'assemblage'. Bottled without clarification or filtration. Production: 897 bottles and 30 magnums only!
Great upcomer in the game and in my opionion the negocé is better than the domaine wines. Crazy riesling done in burgundy style. :)
