Mathieu Allante and Christian Boulanger have worked at the famous Domaine Labet for over 15 years, alongside Charline, Romain and Julien Labet. At the same time, they patiently built their own vineyard by recovering small plots over the years and opportunities. Sometimes they had to clear, plant or do extensive reclamation work. A work of patience in order to develop their own wines, without concession. Today their estate has around 3 hectares of Jura grape varieties: Savagnin, Chardonnay, Petit Béclan, Poulsard, Gamay and Pinot. They are planted on gentle slopes, mainly facing south and west, at an altitude of 250 to 320 meters. The soils consist of Triassic and Jurassic marl on Bajocian limestone. The vines are managed according to the principles of biodynamics. The estate also has two cellars: one in Rotalier where Christian lives and the other at Mathieu's in Gizia, 15 km further south. As the vines are located between these two villages, this organization is quite practical. The vinifications are carried out using indigenous yeasts, without added sulphites.
