Cognac, a distillate famous throughout the world, has benefited from an AOC since 1909 which regulates its production. Only the distillate produced from brandy coming from the AOC Cognac crus can be called by this name. Cognac must be distilled and aged on site following authorized techniques: double distillation in a copper still, aging in oak barrels and respecting a minimum aging period. A good cognac is produced only with a complex manufacturing process. It never comes from the spirit of a single cru, but from the union of spirits of different ages and crus, in some cases up to a hundred. To establish the age of a cognac, only the years of rest in barrels or wooden barriques are considered. In fact, by transferring it to a glass container, the aging of the spirit is interrupted. As cognac ages, it becomes more complex, acquiring more aromas (spices, pepper and cinnamon) and more taste. Only cognacs produced from the Petite Champagne and Grande Champagne crus (minimum 50%) can fall under the Fine Champagne denomination.
