“Saba”, the Emilian name for cooked must, is instead a fresh product, used in these lands since the time of the ancient Romans. The must of local grapes is cooked in the open air for many hours, concentrating it until it becomes particularly sweet and dense. It is traditionally paired with cheeses and for its sweetness it has been rediscovered in pastry making for use on ice creams, creams and ricotta-based desserts.
WHITE SWEET AND SOUR
Giusti White Agrodolce is born from the soft pressing of Trebbiano grapes, from which a particularly sweet juice is obtained.
