The seal number(s) you see on the photos might differ from the one(s) on your bottle(s). 2003 Justino's Colheita Tinta Negra Madeira 3 x 0.75L DESCRIPTION "Justino’s Madeira Wines, S.A." was formed as a limited company in 1953, although it had been in existence since 1870 in Madeira as a private family company, when it was known as "Justino Henriques". This makes it one of the oldest producers and exporters of Madeira Wine, internationally known for the quality of its wines. In 1993, it became internationalized, making an association with one of the larger French groups of wine and spirit distribution – C.O.F.E.E.P also knows as La Martiniquaise - building a new winery with the intention of improving the conditions in which its wines are made, in particular the process of vinification, production and aging. This large, modern and functional winery has been equipped so as to combine traditional methods with the most advanced technology available. Today, Justino’s Madeira holds one of the largest stocks of Madeira wine on the island, including high quality wines aged in oak casks, which enables the company to meet the requirement of the most demanding and selective consumers. Over the years, Justino’s Madeira Wines, S.A. has become one of the leading producers and exporters of Madeira Wine thanks to the acknowledged quality of its wines and the substantial increase in its production capacity. VINIFICATION Manual harvest, with qualitative selection, over several weeks depending on the state of maturation. Total stalking, crushing and pressing. Open spout winemaking. Fermented entirely in stainless steel vats. Interruption of fermentation by adding wine alcohol (96º). Addition of wine alcohol made after 4 - 6 days of fermentation to maintain the desired amount of sugars. Winemaking using traditional methods. Aged using the traditional Canteiro system, in French and American oak barrels of different capacities. TASTING NOTES Attractive amber color. Elegant and complex aroma with notes of molasses, crème brulée, honey cake, caramel and nuts. Rich in the mouth with pronounced notes of spices and caramel. Kind of sweet. Marked acidity and long finish. SERVING Excellent with tropical fruit, dark chocolate, honey cake (traditional from Madeira), chocolate desserts, petit fours, pralines, butter biscuits, fruit cakes, coffee-based desserts, cheeses with a pronounced taste and when served as a digestive or coffee. Serve at a temperature between 18ºC and 20ºC.
