Once fermentation is complete, the marc remains to macerate on the wine for a period of 15–30 days in order to obtain a natural softening and lightness of the tannic part. The wine is aged only in 50 hl oval French oak barrels for a period of 30 months. It takes its name from the lake that surrounds it and which plays a decisive role in the microclimate of this area; the soil is a continuous alternation of clay and strips of very fine marl.
