It remains in tanks where malolactic fermentation is completed and it rests before being racked for subsequent ageing in wood. It matures for 40 months in 225-litre American oak barrels. It undergoes 2 manual rackings each year. Production limited to 218,415 75cl bottles. A minimum of 40 months of aging in the winery's cellars before being marketed.
