It is a completely original beer because, unlike the brewery's other products, it is not brewed with 35% wheat like Lambic. It is made only with pale-ale type malt (which gives a more amber hue to the beer). The Iris retains the typical touch of spontaneous fermentation, the complex aromas and the wine-like taste. There is also a difference in hopping. When we brew Lambic we use 100% over-year hops, for the Iris 50% fresh hops and 50% over-year hops are used. The young hops provide a beautiful bitter touch, while the three-year-old hops with their tannins ensure that the beer can be stored perfectly. When the Iris has matured in barrel for two years, young hops are added again two weeks before bottling. A linen bag containing flavored hops is poured into the barrel and soaks in the beer for two weeks. This technique, called cold hopping, makes it possible to enhance the flavor of the beer and make both its smell and taste more bitter. Although it is a beer of spontaneous fermentation, the Iris differs greatly from the Lambic. With its amber color and slightly bitter caramel taste, it is a complex, nuanced beer.
