This is a set of two Japanese FULL STEEL kitchen knives.

Steel knives have excellent sharpness and edge retention but are prone to rusting and require maintenance. In contrast, stainless steel knives are durable and easy to care for, though their sharpness is slightly inferior to steel. This steel knife set is recommended for those familiar with knife maintenance.

The knife set is crafted in Tsubame-Sanjo, Niigata, a region in Japan's Hokuriku known for exceptional metalwork. Tsubame-Sanjo products, renowned for their craftsmanship and design, are highly regarded globally, especially by professional chefs.

The defining feature of these knives by Teruhide 照秀 is their beautiful hamon (刃文), a wavy pattern also seen on Japanese swords. This pattern appears along the boundary between the hard and soft steel layers, reflecting both the craftsmanship and aesthetic of the swordsmith. The hamon serves both practical and decorative purposes. Along with the easy-to-grip magnolia wood handle, this knife is designed for both beauty and function—enjoy the experience of using it.
