-Billecart-Salmon- The assembly of Billecart-Salmon Brut Reserve, unchanged since 1945, is composed of Pinot Noir, Chardonnay and Pinot Meunier grapes from 28 different municipalities, with a score above 94/100 on the Cru scale. The Maison ages the wine in the bottle "sur lies" (for at least 30 months before dégorgement), in a branched and extensive network of chalk cellars dating back to the 17th and 19th centuries. The temperature is constant, around 12°C, and here the bottles of Brut Reserve remain to rest for a period ranging from 2 years (for the half bottle) to 5/6 years (for the 0.75 bottle) , up to 8 years for large formats. -Drappier- It is a Champagne for lovers of authentic flavours. Drappier created this cuvée entirely from Pinot Noir grapes, and with only 2 g/l of natural residual sugar. The scent of ripe fruit remains imprinted on the nose, while it is pleasantly fresh in the mouth.
