The Extra Virgin Olive Oil of Ornellaia is obtained from the pressing of olives from about 2000 plants, mostly secular, that live in Ornellaia.
The cultivated varieties are the typical Tuscan ones such as Frantoio, Moraiolo and Leccino but also more local varieties such as Gremignolo di Bolgheri, Olivastro di Suvereto and the Ornellaia variety which took its name from the farm around which the Estate. The olive trees grow on the edge of the Mediterranean scrub, between the brooms and the cork oaks. The poor soil and the more severe climate of the hills give a smaller olive with very intense flavors. This Extra Virgin Olive Oil is obtained from the first pressing of the olives, respecting tradition. The veiled appearance is due to the presence of suspended olive pulp particles, typical of new oil, which over time settle on the bottom of the bottle. The early harvesting done by hand and the "soft" pressing determine a limited production of this oil.
