barolo “CANNUBI”
A Barolo, il Barolo.
Uno fra i più prestigiosi cru della zona rende unico ed
inconfondibile un vino che diviene ambasciatore della
qualità e dell’eccellenza di un intero territorio.
ZONA DI ORIGINE
Vigneto di proprietà di 0,5 Ha, sito nei ”Cannubi”; 2.500
ceppi messi a dimora nel 1980, esposizione sud-sud-est.
Terreno: Tortoniano-Elveziano
NOTE CULTURALI
Le viti sono allevate a controspalliera con potatura
medio-corta alla Guyot; la densità media di impianto è di
5000 ceppi ad ettaro e la produzione è ridotta a circa 1,0
kg per ceppo mediante il diradamento dei grappoli.
VINIFICAZIONE
Le uve vengono raccolte mature in piccole casse forate
da 20 kg, operando una rigorosa cernita dei grappoli; il
trasporto in cantina e la pigiatura avvengono entro poche
ore dalla raccolta e la fermentazione viene condotta a
temperatura controllata, circa 30 °C con ripetuti e delicati
rimontaggi. La macerazione delle vinacce è lunga, in media
350 ore; il vino nuove viene, quindi, messo in legno dove
avviene la successiva fermentazione malolattica spontanea.
