Barone di Serramarrocco is a red wine produced in the Sicily region of Italy by the winery of the same name. This wine is classified as Terre Siciliane IGP and is obtained 100% from the Pignatello grape variety. The grapes used for the production of Barone di Serramarrocco come from the production area of Erice, characterized by medium-textured clayey-limestone stony soil. The vinification takes place in red, with macerations at a controlled temperature of 26-28°C for a period of 20-24 days, using stainless steel containers. The alcoholic and malolactic fermentation take place in concrete. After vinification, the wine is aged for 18 months in new 300-litre barriques of medium toasted Allier troncais oak. Subsequently, the wine rests in the bottle for a further 10 months, allowing a complete development of its aromas and greater complexity. Barone di Serramarrocco has an alcohol content of 14% and is recommended to be served at a temperature between 14 and 18°C. This wine pairs perfectly with white meats and red meats, offering a balanced and satisfying tasting experience.
