A small winding road, with magnificent views of the Bec de l'Aigle or the Embiez, leads through the vineyards to the Château de Pibarnon, located on a hill where the old optical telegraph linking Toulon to Paris was located. Pibarnon dominates the entire vineyard and even the villages of La Cadière and Castellet. It was this extraordinary view that Henri and Catherine de Saint-Victor fell in love with, almost 30 years ago. With the energy of the new converts, they gradually expanded the original vineyard, which then only had three and a half hectares. The terroir, absolutely unique, could constitute an appellation in itself. Indeed, the soil contains a high proportion of limestone from the Triassic, a very ancient subsoil that resurfaced during the emergence of the Alps. A geological particularity to which is added the presence of blue Santonian marls, a specificity that we find in the terroirs of Petrus and Château d'Yquem. Quickly, the Saint-Victors will exploit this unique terroir by remodeling the hill. The estate now has 50 hectares in operation. The vines, which spread out in a vast amphitheater facing the sea, are punctuated by the famous terraces, these dry stone walls which delimit the terraces. Most of them benefit from excellent exposure: well sheltered from the Mistral, their orientation towards the South-East favors the slow maturation of the grapes. The estate, today managed by Eric de Saint-Victor, mainly produces red wines from the Mourvèdre grape variety. On the exceptional terroir of Château de Pibarnon, this grape variety, which accounts for 90 or even 95% of the composition of the wine, gives its full potential: it produces wines with fine, tight tannins, which unfold in a bouquet of aromas. powerful and complex.
Patience is the key word of this estate: as in the vineyard, vatting requires time so that the tannins are extracted after long days of maceration punctuated by regular punching down. Fermentation is followed by vatting spread over three weeks. The wine is then aged in oak barrels for 20 months. The Mourvèdre which makes up the majority of this cuvée offers a beautiful fullness to the wine and well-defined tannins. When tasting, we find notes of forest fruits and sweet spices. It is a long-lasting wine that matures over time while retaining a typical southern elegance.
