Giovanni Canonica is a hidden gem and in the meantime a legend in the town of Barolo with limited quantities of production.
Canonica's work is super traditional in the vineyards, without chemicals. In the winery the same approach with minimal intervention: grape pressed with the feet; fermentation of native yeast; no temperature control; very long fermentation in wood; 2-3 rackings at the beginning, and then only once a year after malolactic; aging in botti grandi (very large old slavonian wooden barrels).
Barolo Paiagallo 2015 has great energy, transparency and focus, which connect him with some of the best wines in the region. In some details, it reminds of other great wines from the area: the haunting black cherry from Cascina Francia, the ripe but intense tannin from Bartolo Mascarello, the balance between elegance and rusticity from Giuseppe Rinaldi, the purity and energy of Cappellano. This is a fabulous Barolo that will only improve and show even more complexity in the coming years!
