Peggy and Pascal Buronfosse, researchers and breeders of old vineyards and rare vines. Their current 4.5 hectares on the hills of Rotalier, in Jura, are a living museum to the preservation of the typicality of a territory.
The apprenticeship with masters such as Ganevat and the Labet family has brought knowledge and ability. The rest is iron, tenacity, ardour of the two French farmers. In the vineyard they work in a strictly organic regime, in the cellar they continue without interventionism or even corrections.
The final objective of the virtuous work cycle, which every year magically renews and changes in synergy with nature, is to tell the story of the traditional vines of the Jura, including the very rare and almost extinct ones. High agricultural craftsmanship, in Jura.
Cremant du Jura Indigene 2022:
Peggy's Cremant is pure grit. Lively to the eye with sharp straw-colored reflections, dense perlage. On the nose it delicately tingles with white flowers, green apple, green tea, distant bread crust. In the mouth it is vital and creamy at the same time, with a beautiful wavy pulp, wrapped in salt and a delicious lemon grass. Crispy bubble.
Varron Savagnin 2022:
Varron is an ouillé wine, that is, vinified in a full barrel. In Jura, this is the traditional winemaking method, which preserves fresher imprints than the 'en voile' or 'floral' ones, typical of the region, where different types of oxidation are sought. A Savagnin that comes from a vineyard over 50 years old based on red marl. The minerality of this wine is a verdict.
Grass, moss, graphite, green apple, chalk chasing each other between nose and mouth in a sublime and engaging experience. White from Hyperuranium.
Poulsard 2023:
Poulsard grapes from a plot planted in 1947. Semi-carbonic fermentation of destemmed but not crushed grapes. Two weeks of maceration. After racking, aging in fiberglass tanks and barriques for nine months. Unfiltered, no sulfur added. Organic, biodynamic.
All wines come from a temperature-controlled cellar.
Bottles of first origin, never traveled.
