Nose: Aromas of black cherry jam, berries in alcohol, chocolate, spices, myrtle and cedar. Mouth: Rich, soft, warm and velvety; dense and smooth tannins; notes of black cherry, cocoa and spices; good balance between flavor and alcohol; clean and persistent finish, with balsamic notes. DENOMINATION OF ORIGIN: Amarone della Valpolicella VINEYARD: Bolla GRAPES: Corvina, Oseleta, Rondinella, Corvinone. PREPARATION: Hand-picked grapes starting from the end of September, when perfectly ripe, immediately transported to the drying room. The grapes wither during the winter months, then they are pressed and transferred to vats for alcoholic fermentation at a controlled temperature. After maceration, the malolactic fermentation takes place partly in small wooden barrels and partly in 4,000-liter barrels. PAIRING: Red meats, roasts, grilled meats, game, braised meats, cured meats and aged cheeses. SERVICE TEMPERATURE: 16-18ºC ALCOHOL: 15.8%
