Asemblage 2008.
Made using grapes from ten different cru that created an ensemble composed of 42% Chardonnay, 42% Pinot Noir and 16% Pinot Meunier. Only 21,366 bottles and 1,000 magnums were made of the Champagne that spent seven years on the lees and, after being disgorged in March 2015, aged for a further 12 months. The wine has a dosage of 5g/l, the signature Bruno Paillard gives all his cuvée. The wine has a straw-yellow color with golden reflections and a creamy effervescence. The bouquet is initially somewhat timid with nuances of citrus and spice bread that are then followed by robust notes of white and red currant, then vibrant ones of wild berries and aromatic herbs, almond and walnut short crust. The mouthfeel is concentrated and pronounced and yet upheld by the freshness and other signs of youth – even if Alice Paillard pointed out that “they always say our wines are young when we present a new vintage, even though we are always the last to bring out our wines”. A Champagne in which boldness and tension generously reciprocally amplify each other."
