About SHIMOMURA:
SHIMOMURA INDUSTRIAL CO., LTD. began its blacksmith business in Sanjo, one of Japan’s leading cutting tool production regions, in 1874.
They started from manufacturing agricultural tools such as sickles and hoes. They further evolved the traditional Sanjo cutting tool forging techniques and currently make culinary knives, scissors and slicers mainly out of stainless steel.

SHIMOMURA aim to deliver “sharp cutting tools” to satisfy those who cook with our tools.

SHIMOMURA INDUSTRIAL adopts in-house production. It takes up to 35 steps to create a knife, and skills of craftsmen are utilized in each process. “Wet grinding” is a sharpening process that directly influences the sharpness of the knife and requires the most skills.
The blades are sharpened while water is poured to create an edge called “hamaguri” (blade with a cross-section that resembles a clam). The blades sharpened to a beautiful mirror-finish can cut food effortlessly and maintain their sharpness longer than regular knives.

About Deba 出刃:
The Deba knife is used for cutting hard items, excluding frozen food. It has a characteristic thick blade compared to other Japanese kitchen knives, making it ideal for tasks like filleting fish, dealing with fish bones, and handling small poultry bones.

In addition to fish, the Deba knife is also used for cutting hard vegetables like pumpkin, where other knives might risk chipping.

It is typical to use the back part (about 3-4 parts) of the blade for rough tasks like chopping and splitting, and the front part (about 6-7 parts) for precise tasks like filleting and carving.

Maintenance:
About the rust, after use, wash off dirt and remove moisture with a dry cloth to prevent rust.
Be especially careful when cooking raw meat, raw fish, or raw foods that are high in salt.
