César Príncipe Crianza is a red wine from the D.O. Cigales made by César Príncipe. This wine is a single-varietal Tempranillo. César Príncipe Crianza is born from grapes from three different plots located in Fuensaldaña, in Valladolid. The vines of these are old and have a very low density. The harvest is manual and selected. The bunches, once in the winery, go through a complete destemming process. A cold maceration is then carried out for about two days. The must resulting from this process is subsequently fermented in stainless steel tanks at a controlled temperature of between 28º and 30º. After the first fermentation of approximately one week, maceration occurs in contact with the skins for three more weeks. César Príncipe Crianza then carries out the malolactic fermentation: part of it is done in barrels and the rest in tanks. César Príncipe Crianza finally ages in French oak barrels -80% of the total- and American oak barrels -the remaining 20%- for a period of 14 months. The barrels are renewed and no racking takes place. The César Príncipe winery, named after its founder, has 40 hectares of old vines with an average age of more than 60 years. This is one of the greatest exponents of the D.O. Cigales.
